Key Note estimates that the ice cream and frozen dessert market was valued at £1.62bn in 2003, having seen year-on-year growth since 1998. The increase in sales has been driven by rising turnover in the ice cream sector, while frozen desserts sales growth stagnated.
 
Take-home products accounted for the greatest share in the ice cream market with multipacks forming the largest proportion of sales ahead of tubs and blocks of ice cream, or frozen ice cream desserts. The high level of brand activity in the wrapped impulse subsector has boosted this trend and a growing range of products has become available in take-home formats. Tubs and blocks of ice cream have also seen a significant level of activity, with major brands offering new flavours and formats.
 
The frozen desserts sector has suffered from the strong level of competition from ice cream, as well as the development of the chilled dessert market since the mid-1990s. Changing eating habits, with the disappearance of a formal sweet course after a meal, has also meant that frozen desserts are often only consumed at larger eating occasions and family meals.
 
New product development in the ice cream and frozen desserts sector has been driven by a number of influences. The extension of confectionery brands into the market continues, with more established names becoming available in a larger range of products. The point of entry tends to be wrapped impulse ice creams, moving towards the tub variety. Premium recipes continue to perform strongly, with consumers happy to pay more for high-quality brands and ingredients.
 
The market continues to be dominated by a handful of brands led by Walls, Nestlé and Mars. These companies undertake a high level of investment in building their brands and developing their products. Haagen Dazs is a strong performer in the premium ice cream market.
 
The ice cream and frozen desserts market is set to experience ongoing growth. Premium products will continue to be a major driver of sales. However, both Unilever and Richmond are set to take on the healthy eating market in 2004, and this too will provide opportunities.
